Paring knives are also known as vegetable knives and are another must-have in any serious kitchen.

The paring knife typically has a short blade around three to four inches long, and looks like a smaller version of the Chef’s knife. Its perfect for delicate work such as seeding chillies, coring fruit or peeling vegetables. You’ll more often be using this knife when the vegetable is in your hand than on a cutting board.

Paring knives generally don’t last as long as the bigger knives, so it’s not worth spending too much money on one. Also, they’ve a tendency to go missing as it’s easy to sweep them into the bin with a pile of vegetable peelings!
